I have my routine and I have my way of cooking and baking, so new tools don’t always fit in seamlessly. That’s why it always takes me by surprise when an unassuming piece quickly becomes something I couldn’t live without. That’s exactly what happened with this mini Dutch oven. I swore by the Dutch ovens I already owned, with their mid- to high-volume size. I didn’t think a smaller 3.5-quart option would hold up for me, but I was sorely wrong. It's the perfect size for everything I make, whether it's for just myself or for my partner as well. And it definitely helps that it can sear, simmer, bubble, and bake everything to perfection, churning out my favorite winter dishes with ease. It’s made exactly how I like Dutch ovens to be made, with a cast iron interior and an enameled exterior. The cast iron of this pot works phenomenally at generating and retaining heat, which is very important for all of the things I make in a Dutch oven like soup or sauce. Thanks to its high walls, it is able to heat through and maintain its heat for soups, stews, and sauces. And because it gets as hot as cast iron, I can get a nice sear on ingredients too, which helps build flavor. The enameled coating is great as well: It’s nice and durable, keeps things from sticking, and takes away the stress of having to maintain this pot overtime, like you would with regular cast iron. I find myself reaching for this Dutch oven most often for my tomato sauce, which is pretty much always bubbling on my stovetop. The heat conduction in this pot helps me fry garlic cloves in really good extra virgin olive oil until they’re evenly golden, with no dark spots or hot spots. This is key for me, because if you take the garlic slightly over, the sauce is bitter. So I really like the control I have. Then I just add san marzano tomatoes, bring it to a quick boil, add salt, and steep it with basil. It's such a quick process in this pot because it holds its heat well. I also find that the smaller size makes it so that everything cooks at the right pace — the garlic has enough oil to be slightly submerged, and the sauce has enough volume to bubble without cooking down too much. If I am making pasta dishes that don’t further cook down the sauce, like my quick broccoli rabe, sausage, and tomato pasta, I’ll toss the pot into the oven to bake the sauce for added depth of flavor. The pot is compatible with any stovetop, and it's oven-safe up to 500℉. Thanks to its round shape, it fits on burners very easily without taking up a lot of space (it's 9 by 6 inches with the lid). The two helper handles help me move it around, and the lid stays on nice and tight so I don’t have to worry about anything boiling over on the stove or leaking in the oven. At 3.5-quarts, it's been the perfect size for the sauces I love, the egg drop noodle soup I have at least once a week, the homemade jams I make every season (the last batch was pear), the fried fish I made for tacos just the other week, and the small loaf of bread I made the other morning. None of these recipes would’ve come out as good had I not had the heat generation and control I have with this pot. (The bigger version is a Food & Wine favorite too, for the same reasons.) Aside from how well it performs and how much I use it, the pot is beautiful to look at. I love the pepper shade — it’s a rich matte black that I know will stay overtime. The rose-gold handle adds a really unique touch, too. The inside of all of the Dutch ovens are a cool gray, which is nice because it's light enough to easily see how brown the ingredients are getting. There are other matte shades, like broccoli green, mustard yellow, and vibrant blueberry. The brand also recently launched the pot in a glossy finish, including orange butternut, gorgonzola blue, and plum purple.
