Overnight oats are an easy way to make breakfast one or two days in advance of when you plan to eat. Instead of cooking the oats, you soak them with milk to soften them, making them ready to eat. Combining milk and yogurt gives this breakfast a bit of heft and tangy flavor. The chia seeds added with the oats and milk will swell up to thicken the oatmeal. How long do overnight oats last? You can make overnight oats up to five days before eating them, but the texture of the oats will soften the longer they sit. If you decide to add fresh fruit to the mixture, the oats are best eaten the day after making them. Notes from the Food & Wine Test Kitchen We prefer using rolled oats in this recipe; they soak up the liquid better than steel-cut oats, and hold their texture better than instant oats, which can fall apart in recipes like this one. If you like, top the oats with chopped raspberries, blueberries, or strawberries in the morning before eating. And, of course, feel free to use your favorite jam in this recipe; strawberry jam, peach jam, fig jam, and orange marmalade are some of our favorite additions. Ingredients 1 cup plain Greek-style yogurt, 2% milkfat 1 cup whole milk 1 tablespoon honey 2 tablespoons peanut butter 2 tablespoons raspberry jam, divided 1 tablespoon chia seeds 1 cup rolled oats (see Note) 1/2 cup chopped peanuts Directions Whisk together yogurt, milk, honey, and peanut butter in a bowl until fully blended. Stir in chia seeds and oats. Transfer 1/3 of the yogurt mixture to jars and top with half of the raspberry jam. Spoon another third of the yogurt mixture into jars, and top with remaining jam. Add remaining yogurt mixture to jars, cover with lids, and refrigerate 8 hours or overnight before eating; oats can be refrigerated up to 48 hours before serving.
